The Chocolate Line is the one that experiments. 🚀 Dominique Persoone built its reputation on flavours that sound wrong and are not: tobacco, wasabi, Cuban cigar, fried onion. Ask what is unusual today rather than picking from the case, and buy a couple of pieces rather than a box.

Chocolate and beer, which in Bruges is not a strange pairing. 🍻 Several Belgian dark ales are aged on cocoa, and the heavier abbey beers sit surprisingly well after something sweet. Ask what they have on tap from the city itself — Brugse Zot and Straffe Hendrik are both brewed a few streets away.

A pause, in the middle of a walk that is otherwise all sugar. 🙏 The basilica holds a vial said to contain a cloth stained with the blood of Christ, brought back from the Holy Land in the twelfth century, and brought out for veneration each day. The lower chapel is dark and plain Romanesque; the upper one, up a staircase, is the opposite. Both are free to enter.
